Carbon dioxide prolongs fermentation by slowing the decomposition of sugars, promoting the development of unique flavors, and drawing out more clarity and complexity from the coffee.\u003c\/p\u003e\n\u003cp dir=\"auto\"\u003eOnce the farmers deliver the coffee cherries to Tracon’s Deri Kidame Washing Station, they are submerged in clean water to wash out any dirt or contamination that could affect the development of bacteria inside the fermentation tank. After being cleaned and classified by density, the heaviest cherries are selected and placed inside sealed tanks to ferment for 72 hours. The cherries are then transferred onto raised beds to thoroughly dry for 21 days.
