What we taste: baked apple + cocoa crispies + wafer

Aracely Martinez Gomez leads a group of 18 women producers and their families in villages surrounding the town of Erandique, Honduras. Founded in 2015, these women focus on preserving their indigenous Lenca culture while sustainably impacting the industry with leadership development in coffee cultivation. The traditional Lenca agroforestry technique is both environmentally and economically sustainable while advantageous for growing complex, flavorful coffee.

While coffee production in Honduras didn’t begin until the 18th century, the Lenca indigenous people mastered their  methods long before the arrival of Europeans. Coffee is grown in the shade of various pine and fruit trees, slowing the coffee maturation process, reducing soil erosion, and retaining ground moisture. In addition to the income from coffee, the Tierra Lenca Women’s Group sells honey, grains, timber, and various fruits, leaving little to no waste while living in tandem with their environment.
