Deri Kidame:

This sweet, fruity coffee was brought together by the collaboration of smallholder farmers from the Deri Kidame village in Ethiopia, who primarily focus on the cultivation of coffee on a small scale, and Tracon, a highly regarded family business which consists of 30 washing stations for processing coffee throughout Ethiopia.

Local farmers harvest the coffee cherries and sell them to the Tracon Deri Kidame washing station, which is managed by Kenzu Ahmed, who provides oversight and management of all the experimental projects for Tracon.

Process:

Carbonic Maceration is a fermentation process where coffee cherries are placed in an airtight vessel, allowing bacteria to grow and break sugars down into carbon dioxide and alcohol. Carbon dioxide prolongs fermentation by slowing the decomposition of sugars, promoting the development of unique flavors, and drawing out more clarity and complexity from the coffee.

Once the farmers deliver the coffee cherries to Tracon’s Deri Kidame Washing Station, they are submerged in clean water to wash out any dirt or contamination that could affect the development of bacteria inside the fermentation tank. After being cleaned and classified by density, the heaviest cherries are selected and placed inside sealed tanks to ferment for 72 hours. The cherries are then transferred onto raised beds to thoroughly dry for 21 days. During this drying phase, the coffee is routinely raked and rotated by hand to ensure consistent exposure and uniform drying.
