                          A note about your order
To ensure you're receiving the freshest coffee possible, we generally push orders placed over the weekend to the following roast week. So if you order on a Friday afternoon, your order may not be sent out until Wednesday. This also includes 5lb bags.
Well, well, well, would you look at that - another incredible coffee brought to you by our friend David Solano. Who would’ve thought? (We did!)
It’s no surprise this coffee is delicious. David Solano has been providing top notch coffee for years, however this is the first time we’ve offered one of his natural-process coffees! This is a limited offering, and only available in 12 oz bags (no 5 lb offerings).Process
A great tasting cup of coffee always begins at the farm, which is why David chose to use cherries from his Red Bourbon coffee trees. These trees are super dense, which provides cherries sufficient natural shade, and they’re grown on a mostly flat topography, which helps prevent the ground from eroding. As a result, these cherries are some of the best David has to offer.
When the cherries reach preferred ripeness, they’re harvested and taken to the farm’s wet mill where they’re fully submerged in water and thoroughly washed to get rid of any dirt or other possible contaminants from the cherries’ skin.Once the cherries are squeaky clean, they’re classified and sorted by density before being placed on drying beds inside the farm’s greenhouse, which provides a temperature controlled environment. The cherries spend five days on the highest drying beds in the greenhouse to meticulously regulate exposure to airflow and humidity. This initial drying phase is crucial in developing those sweet, fruity flavors that natural coffees are known for.Roasting
